We are always trying to introduce more veggies into Scarlett’s diet and this week it was Zucchini Fries to the rescue! Easy to whip up and the dry ingredients last a good amount of time so no need to worry about eating zucchini fries every night for a week. Here is what you need.
Zucchini squash
2 eggs
Panko or your personal favorite bread crumbs
Paprika (again I used smoked paprika)
Oregano or Italian blend seasoning
Salt
Pepper
Shredded Parmisan (not the powdered style)
Pre-heat over to 425. Beat your two eggs together into a bowl. Mix the dry ingredients together on a shallow plate. This mix goes a long way so don’t make too much and waste it. Slice your zucchini into fries. Dunk the fry into the egg wash, coat with your breadcrumb mix, and place on an oiled baking sheet. (Handy tip: Use one hand to dunk fries in the egg wash and place on crumbs, use your other hand to cover with crumbs and place on sheet. This keeps both hands cleaner and easier to work with.)
Now place your tray in the over for 20-25 minutes. Remove and Enjoy!
