Breakfast Apple Streusel

Makes 2 to 4 servings


Streausel topping

1 1/2 Cups almond flou

1/8 cup brown sugar

1 tsp Cinnamon

1/4 cup butter at room temperature


Apple filling

3 apples, cored and chopped into 1/2 inch pieces

1/8 cup of brown sugar

1 tsp cinnamon

1/2 Tsp Cardamom

1/4 tsp cloves


Preheat oven to 350 F. In a small bowl, mix all the ingredients for the streusel topping by hand or using a hand mixer. In a medium bowl, combine all the apple filling ingredients and mix them well. Divide the apple mixture into four 8 ounce baking ramekins and pack them down with 1/2 inch of streusel topping. Bake for 25 to 30 minutes, until streusel topping is lightly browned. Serve warm or refrigerate. Top with 1 ounce almond slivers or 2 Tablespoons chia seeds.
