OH EM EFF GEE this stuff is sooo good. It satisfies many cravings. For me, I need crunch in my life, and I just canot sit and nom on some carrots all day. I need a little excitement. I need some pizzazz in my veggie snack. Here is an answer to some of my clean eating prayers. Introducing Cauliflower popcorn. Its got the crunch, the salty, a tinge of sweet, and the fiber! I am not sure how I feel about the fact that I eat an entire cauliflower in one sitting, but hey, its just that good and good for you. It shrinks down a bit as you cook it. Enjoy !
1 head cauliflower, cut into small florets
3 tablespoons olive oil
Heat oven to 400° F.
In a large bowl, combine the cauliflower, oil, and 1/2 teaspoon salt. Transfer to a baking sheet and spread in a single layer.
Roast, stirring once, until golden brown and tender, about 30 minutes.
