We love Asian & Mexican food, and rice is a major staple in most of my recipes that I enjoy cooking. I eliminate the rice and replace it with cauliflower! I promise you will not believe how similar it tastes, and you get an extra serving of veggies in with your meal. This recipe fits Dairy Free, Gluten Free, Keto, Low Carb, Paleo, Vegan, Vegetarian diets!
For the best texture, you’ll need a food processor. The fastest and easiest way to prepare your rice is to use the grater blade in the food processor. It seriously only takes few seconds to grate the entire head of cauliflower. If you don’t have a food processor, just grate by hand with a grater.
A simple trick that I have learned along the way is to only cook the amount of rice you are planning on using and store the rest in the refrigerator. I like to keep a big bowl in the refrigerator and just scoop a couple cups at a time for each meal.
When you are ready to cook your rice, the fastest way is to saute it on the stove. I use a small amount of coconut oil, and it makes it just the right consistency (not too sticky or soggy)! You can season it with a little salt and pepper (or your favorite spices!), and cook it for about 5 minutes.
It is seriously that easy and simple!
