375 Calories of summery goodness!!!
I whipped these up for my family last night and it was amazing! This will require a trip to Costco as a couple of the key ingredients are unique to Costco!
This will be portioned out in a single serving
15 Small Shrimp
2 Small Corn Tortillas
1/4 Diced avocado
1/3 Diced tomato
1/4 diced onion
1 table spoon of Jalepeno Greek Yogurt (Skotidakis). Amazing stuff, I put it on everything!

1/2 teaspoon of Chilli powder
1/2 teaspoon of Cumin
1/2 teaspoon of soy sauce.
sprig of cilantro
Heat frying pan up with 1/2 tablespoon of olive oil. Thaw and pan fry shrimp. Toss in seasonings and cook until golden on all sides. Remove shrimp. Place tortilla onto frying pan and let sit until golden brown and crispy. Top with shrimp, veggies and yogurt dip. mmmmm enjoy!
