Um hello who doesn’t want to eat pizza!!?? Especially when it is under 300 calories for the entire thing! During my trip to Florida I was inspired by a few of the various vegan and vegetarian places that I stopped into. I took a few ideas from various things that I tried. Grilled flat bread pizza is huuuuuge in California and Florida. I added a little bit of a healthier twist to this!
1 Flax and grain tortilla (110 calories for 1 large tortilla). The brand is Lawash!
1/2 cup of mozzerella cheese
1 tablespoon of bazil pesto
1/4 cup of small cherry tomatoes halved
mixed spinach, argala, and summer salad mix
Balsamic Vinaigrette (blend 1 cup balsamic, 1/2 Cup of extra virgin Olive oil 1/4 cp of mustard, two table spoons of brown sugar, half of an onion, 1 table spoon of minced garlic. This will make a bottle of dressing that you can keep in your fridge! YUM)
1 teaspoon of garlic salt
With this pizza a little bit goes a long way. The flavors pack a major punch! First fire up your grill. I use an indoor house grill. You could even use your stove top on medium to low heat. Just put foil over your coils or top. Evenly spread pesto over the top of the tortilla. Add cheese, garlic salt, motz cheese, and place on grill. Wait until tortilla is a little bit tougher. Add tomatoes on top of cheese. Evenly distribute mixed green and onions on top of pizza. Drizzle with balsamic dressing. Grill until tortilla is crispy and the cheese is nice and melted.
