Paleo Pumpkin Spice Cookies

I have really enjoyed playing with paleo recipes as I discovered that my body functions optimally when I eliminate wheat from my body! I decided to eating primarily gluten/wheat free since I did the Shakeology Cleanse. I felt such a big difference in my body after not eating gluten for 3 days, that I wanted to continue to eat that way! I am faster in my workouts, less bloated, less itchy, my skin is smoother, my face is brighter! I love it! My sweet tooth was in full force this week. Holiday cookies where everywhere and I was dieing for some. So I made I played with my ingredients and yielded these!! They are absolutely delicious and do not leave you with a belly ache! My daughter loved them, and she had been eating “real cookies” all week! Don’t get me wrong, I treated myself to some “real cookies” but I really wanted to indulge and eat more than one lol, I ate like 7 of these lol! So good! Enjoy!IMG_5990_zpsd26904a0



Yield: 15 cookies


1/2 tsp Baking Soda
1/2 cup Coconut Oil, Organic
2 cup Almond Meal/Flour
1 Tbsp Pumpkin Pie Spice
1/2 cup Pumpkin Puree
1/2 tsp Salt
1/4 cup Coconut, shreddedunsweetened, optional
1 Tbsp Pure Vanilla Extract
1/2 cup Maple Syrup, Grade B
Preheat oven to 350.
Blend all ingredients in a large mixing bowl with a hand mixer.
On a parchment lined baking sheet, drop spoonful of batter (about 1-2 tablespoons in size).
Bake for 30-35 minutes.
Let cool and serve.
