There is pumpkin spice everything everywhere, and I an almost gaurantee that the majortiy of it is fille with sugar and more sugar. Pumpkin donuts, pumpkin spiced latte, pumpkin pie… its not even fall yet! I love fall but this is about the time of year when I start to see the scale increase! This is a recipe that will help you stay on point and give you an awesome start to your day!!
Ingredients:
1/3 cup organic canned pumpkin puree 1/2 tsp vanilla extract 1 serving vanilla protein powder (this equaled two scoops for me). I like to use Muscle Milk for protein pancakes. I have tried other protein powders and it was a little dry. 2 egg whites or 1 whole egg 1/4 tsp cinnamon 1/4 tsp pumpkin pie spice (optional)
Mix all ingredients into a bow and mix!
Heat pan on medium high. I like to use Pam OLIVE OIL Spray. Pour ingredients onto hot pan. Let simmer for 3 minutes and then flip. If not cripsy and golden brown wait.
